Flavourful, simple, and non-boring Mediterranean salad

A hearty and refreshing salad that actually fills you up

I have a confession to make… I am not a huge fan of salads. In fact, my least favorite vegetable is iceberg lettuce. Traditionally this salad is made with cucumbers, but my mom is allergic to them. I decided to replace it with zucchini, and tastes amazing. Also, I swapped the red or white onion for green onion for a more subtle flavor. This salad is perfect for meal prep because, through time, the flavors will intensify. For protein, you can add chicken or chickpeas and some starch like rice.

  • 3 Roma tomatoes
  • 1–2 zucchini
  • 2 stalks of green onions
  • 1/4 lime juice
  • Salt and pepper
  • 3 tablespoons Extra virgin olive oil
  • 1/2 cup fresh parsley

1- Wash all the vegetables carefully.

2- Cut the zucchini, tomatoes, and green onions into bite-size pieces and put them in a bowl

3- Add the parsley, olive oil, lime juice, salt, and paper in a food processor. Let it process until it forms a paste.

4-. Mix the parsley paste with the vegetables until it feels right. You can add more salt and pepper if it needs it.
